An easy hike, with lots of great geology is to go up Mosaic Canyon, it is right out of Stovepipe Wells. About 1 mile from the motel to the turnoff, and then a short dirt road drive up the road. The trail is in the canyon, so it is well shaded. I is do-able in the day time.
This is a good starting point.
