I ate there in October and found the same thing. Paid lots but got little. Glad it was the last meal I had in Death Valley. By comparison, the meals at Panamint made Stovepipe meals look like an appetizer, and a very expensive one at that. I would never eat there again. Like you said sometimes you have to try something once, but only once. A 45 minute drive down the highway will put you in the most congenial setting, with food that will guarantee to fill you up, and staff that make you feel at home.
