This was already mentioned, but I always enjoyed climbing up on the bluffs above Texas Springs campground and enjoying the view as the warm sun washes over you.
You don't really need to go to any place remote, however, I've also enjoyed sunsets from the east side of Saline Valley in part because it is possible to be several miles from another human being, jackrabbit, or other 4-legged creature, allowing one to experience the view in complete solitude.
